Habanero Hard Candy

I bought 7 pounds of Habaneros at the Dallas Farmers Market so I’m going a little nuts with the heat. 🙂

4 cups Sugar, 2 cups Water, 1 1/2 cups Corn Syrup, and 2 cups of Habaneros.

Use a brush with water if sugar boils overl and reduce heat.

Bring to 302 F

Boil for about 3 minutes.

Pour over rack and strain.  Remove racks and allow candy to cool.

Once completely cooled, break into small pieces.  Use care since candy is very sharp.

Place in bag with a 1/2 cup of sugar and coat.
