I bought 7 pounds of Habaneros at the Dallas Farmers Market so I’m going a little nuts with the heat. 🙂 4 cups Sugar, 2 cups Water, 1 1/2 cups Corn Syrup, and 2 cups of Habaneros.
Habaneros… 🙂Slice and seed.Grease sheet pan and racks.Use a brush with water if sugar boils overl and reduce heat.Bring to 302 FAdd HabanerosBoil for about 3 minutes.Pour over rack and strain. Remove racks and allow candy to cool.Once completely cooled, break into small pieces. Use care since candy is very sharp.Place in bag with a 1/2 cup of sugar and coat.
If you want “neater” pieces of candy, coat the top with powdered sugar and use a rocking-style pizza cutter and make a grid pattern before it cools. The pieces break apart pretty well afterwards without as many jagged edges.

That’s a great idea. Humidity in Texas sucks and after a couple of days, they all stuck together into one big piece.
