Thomas Keller Brownies

Awesome recipe for buttery brownies.  I love Thomas Keller almost as much as I love butter.  Adapted this recipe for a birthday cake for a guest.

1 1/2 cup all-purpose flour
2 cup unsweetened alkalized cocoa powder
1 1/2 pound unsalted butter, cut into 1-tablespoon pieces
2 teaspoon kosher salt
6 large eggs
3 1/2 cups granulated sugar
1  teaspoon vanilla paste
3 cups chocolate chips

1.  Preheat 350F.

2.  Divide the butter into half one into a small saucepan melt butter and another to a heat resistant bowl.  Mix until butter is creamy at room temperature.

3.  On medium using a paddle, cream eggs and sugar.  Add vanilla.

4.  Mix dry ingredients and alternate adding `1/3 to egg mixture with the melted butter.

5.  Continue to mix and add cocoa powder.

6.  Gently fold in chocolate chips.

7.  Grease and line a 1/4 sheet pan.  Pour batter and bake 50 minutes or till toothpick comes clean.

Add melted butter to cold butter....  Yummy.

Pour to sheet pan.

I overfilled my piping bag so it was a disaster.  Plus, I'm horrible at decorating.

    There is no such thing as a disaster in decorating good food. The “eye” are merely spectators- the taste buds are the only judge that matters. 😉

  2. Lol. My food always smells amazing and tastes pretty good but my presentation isn’t always the best and I need to work on my portion control. 🙂
