Plum Bread

I had a bag full of red plums that were getting on the ripe side and since I didn’t feel like spending a day on the toilet, so I decided to make some bread.

  • 2 cups Plums, pitted and diced
  • 1 Tbspn. Flour
  • 3/4 cup Butter, softened
  • 1 1/2 cup Sugar
  • 1 teaspoon Vanilla extract
  • 3 large Eggs
  • 2 1/4 cups Flour
  • 1 tsp Salt
  • 3/4 tsp Baking Soda
  • 1/2 cup Sour Cream

Preheat oven to 350 degrees and line 2 loaf pan with parchment paper.

Half plums and remove pit.  Continue to slice and dice, toss with 1 Tbspn. of all purpose flour and set aside in bowl.

Cream butter, sugar and vanilla.  Add eggs in one at a time and continue to mix.

Combine dry ingredients; flour, salt, and baking soda and slowly add to batter.  Add sour cream and continue to mix till batter is smooth.  Remove from mixer and fold in plums.

Fill lined loaf pans half full and bake for 35-45 minutes at 350F.

After creaming butter, sugar and vanilla.  Add egg and the remaining dry ingredients.  Fold in sour cream.

Gently fold in plums and distribute between two lined loaf pans.
