Piroshky Dough

Starter

2 ¼ tsp Dry Active Yeast

½ tsp Sugar

½ cup All Purpose Flour

½ cup Milk, warmed (100-110F)

 

Dough

½ cup Milk

8 oz Butter, Melted

2 ½ tsp Sugar

2 ¾ cup All-Purpose Flour

½ tsp Salt

2 Eggs

 

  1.  Combine and mix ingredients for the starter in a medium bowl. Cover and allow to rise in a warm area for 30 minutes. 
  2. Stir in milk, butter, sugar, salt, and eggs to the starter. Slowly add in the flour and form a soft and slightly sticky dough. 
  3. Turn dough onto a lightly floured surface. Take care not to add too much additional flour. Knead for 3-4 minutes until the dough is smooth. Grease bowl and cover for 1 hour.  
  4. Punch down dough and divide into 4 equal portions.  Take 1 of the quarter and divide it into 6 pieces. Roll each piece to 3 ½ inch disk. Fill with desired filling and crimp tops.
  5. Allow the dough to rise 20 minutes. Brush egg wash and bake 20-25 minutes at 350 F.
