Daikon Kimchi

  1. Peel and cube daikon 1 inch
  2. Mix 2 Tbsp salt 3Tbsp Sugar and toss with daikon. Marinate 30 minutes.
  3. Sauce: Mince 2 Tbsp garlic, 1 tsp ginger, 3/4 Korean chili flake, green onion, 2 Tbsp shrimp 1Tbsp fish sauce
  4. Drain and reserve 1/4 cup juice and add to sauce.
  5. Mix and place in jar
