Candied Garlic Slices

I saw this used as garnish at Uchiko in Austin and decided to try it at home. I added it to guacamole and it was awesome.

Garlic
Sugar
Water
Oil

1. Slice garlic very thin.
2. Heat Equal part sugar and water in pan. Add garlic as bubbles form. Cook just as sugar starts to color.
3. Heat oil and fry garlic chips.
