Char Siu recipe called for Dark Soy Sauce and with no Asian grocery in sight, I had to resort to making my own. Never had it by it’s self but this soy tastes like candy and delicious!
1 cup Brown Sugar
1/4 cup Water
1/2 Soy Sauce
1. Mix water and brown sugar and bring to a rapid boil. Do not stir once the sugar water start to bubble. Lower heat to medium low and add soy sauce once the texture is close to molasses. Take care not to burn yourself as your pour the soy in the molten hot sugar. Stir and continue to cook for a couple more minutes.
2. Cool and transfer to squeeze bottle. =)

When I first saw the pic it looked like dark coffee.
It’s like molasses and adds a great burnt sugar taste to the soy. Tasty!
