Spicy Pinto Bean

I find most Texas beans to be really boring but I fell in love with Pecan Lodge’s Jalapeno beans.  I tried to make something similar and came up with something completely different but pretty good.  Not bad for my first go at beans.

  • 1 pound Homemade Apple Wood Bacon or any bacon
  • 1 pound Pinto Beans
  • 2 cups Chicken Broth
  • 1/2 cup Jalapeno, canned
  • 1/4 cup Ketchup
  • 1/4 cup BBQ Sauce
  • 1 Onion, finely diced
  • 1 canTomatoes, diced
  • 1/4 cup Apple Cider Vinegar
  • 1/4 cup Worcestershire Sauce
  • 3 Tbsp Spicy Mustard
  • 2 Tbsp Garlic Powder
  • 1 Tbsp Chili
  • 1 Tbsp Chipotle Powder
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Black Pepper
  • 1 tsp Liquid Smoke

Fill large sauce pan with washed beans and water.  Bring to simmer and continue adding water to prevent burning.  I added chicken stock towards the end.

In a large wok (I'm Asian) fry bacon.  Pour out most the drippings except about 3 Tbsp.

I think I added everything else at this point.  Really doesn't matter and doesn't have to be precise, just to taste.

They're not that sexy looking but they tasted great.
