Pancetta Fridge – Pancetta Update

I turned my wine fridge into a pancetta fridge.  Yeah, I went there.

After 7 days in a bag.

Over and pull.
Repeat.
Repeat.
Decided to wrap it in cheese cloth.

Looking more like pancetta.

Tie off the ends.

Repeat.  I couldn't roll one because it was too thick so it'll dry for only one week verses two.
