After 7 days in a bag.Belly is now cured.Rinse and pat dry.Cracked pepper.ROLL and ROLL tightly.Butcher’s twine.Loop.Over and pull.Repeat.Decided to wrap it in cheese cloth.Looking more like pancetta.Tie off the ends.Repeat. I couldn’t roll one because it was too thick so it’ll dry for only one week verses two.YEAH!55 F with a pan of water for humidity. Hopefully this works.
