I ordered 50 pounds of pork belly two weeks ago but they sent me 60 pounds of pork belly skin.  That’s a lot of craklins, enough to feed a small southern army.  So I returned and and somehow received 75 pounds of beautiful pork belly.  That’s a lot of belly.  =)

We broke them down into 4 pound squares and I’ll making pancetta, bacon and will be obsessed with pork belly for the next few months.
