I’m a nerd and like kitchen toys and gadgets. I decided to buy a whipped cream dispenser and try to make different types of espuma for the bar. First up is watermelon!
Watermelon Espuma – 1 liter
4 cups of watermelon juice
6 gelatin sheets (1 tablespoon powdered gelatin)
Blend or juice 4 cups of watermelon juice. In a small saucepan, heat 2 cups of watermelon juice and bring to a simmer. Add 6 sheets of gelatin and remove from heat. Stir to dissolve and add remaining juice. Strain juice and refrigerate. Pour into dispenser and refrigerate for 3-4 hours. Charge with c02 (2 for liter).
Watermelon Margarita with Watermelon Foam
2 oz Patron
1 oz Cointreau
2 oz Sweet & Sour or (Agave + Lime Juice)
1 oz Watermelon Espuma
In a shaker fill with one scoop of ice. Add Patron, cointreau, sweet & sour and cover then shake vigorously. Strain into glass and finish off with watermelon foam.
