Apple Fritter (Thomas Keller)

Thomas Keller’s apple fritter taste more like apple flavored funnel cake than traditional apple fritters.  They are wonderful and I can’t wait to try different variations of this dessert.  I used red delicious apples and added vanilla extract.

2 cup All Purpose Flour

4 tablespoons Sugar

3 teaspoons Baking Powder

1/4 teaspoon Cinnamon

1 teaspoon Salt

2 large Egg

1 cup Milk

1 tsp Vanilla Extract

6 large Red Delicious Apples

1/2 cup Powdered Sugar

1. Wash and peel apples.  Cut into match sticks.

2.  Mix flour, baking powder, sugar, salt, cinnamon together.  Add eggs, milk and vanilla extract.

3.  Heat oil to 375 F.

4.  Drop apples into batter and mix well.  Using thongs or chopsticks, grab 5-6 and drop into oil.  Repeat until basket is full.  Wait about 2 minutes and flip to brown other side.  Remove from heat when golden brown and allow to drain.  Repeat till finished.

5.  Dust with powdered sugar.

Fry approximately 2 minutes on each side till golden brown and thoroughly cooked through.
