White Loaf Bread

I picked the hottest day of the year to bake bread.  It was 104F outside and while waiting for the dough to knead, I decided to have a drink.  Made a huge mess and don’t know how I managed not to burn myself.  12 loafs all turned out really well.

 

4 1/2 tsp. Yeast

4 cups Water 115F

1 cup Sugar

1 cup Butter

1 1/2 tsp. Salt

4 Eggs

16 cups All Purpose Flour

 

1.  Dissolve yeast in water and add sugar, butter, salt, eggs and 8 cups of flour to a mixer stand.  Mix on medium low with paddle attachment.

2.  Switch to a dough hook and add remaining flour.  Knead for 6-8 minutes.  Oil a large bowl and add dough making sure to flip once to oil the top of bread.  Cover and allow the dough to double in size about 1 hour.

3.  Punch dough and on a floured surface, divide into half, quarter and eighths.  Roll out each eighth and roll out to 1/3″.  Roll the dough onto itself and seal the crease.  Place into greased pan and allow to rise again for about 45 minutes.

4.  Preheat oven at 350F and place in oven for 30 minutes or until golden brown.
