Watermelon Rind Preserve

Another southern treat that I’ve never had.  Sounded interesting so I gave it a go.

5 cups Watermelon Rind

3 cups Sugar

1 lemon

3 cinnamon sticks

1 Tbsp. All Spice

1 tsp ground Ginger

Remove from rind and set aside for watermelon preserve.

Remove skin by slicing down with knife.

Add sugar and refrigerate overnight.

Next day there should be a lot of fluid.  Bring to a boil.

Fill sterilized jars and bake in oven with lid for 10 minutes.
