Watermelon Jalapeno Jelly

It’s summer time and I’m going to preserve, jelly and jam every fruit that grows around here.

6 cups Watermelon

5 cups Sugar

2 Jalapeno

1/2 Lemon

2 pkg Liquid Pectin

Pre-heat oven to 350F and wash mason jars.  Place jars on sheet pan and bake for 25 minutes.

Seed and chop jalapenos.

Add sugar, lemon juice and jalapeno to watermelon in saucepan and bring to boil.

I used a handheld immersion to blend.

Add pectin and simmer for 15 minutes.

Ladle into jars and use a wooden stick to remove air from jar.  Wipe jars clean and place lid and ring.  Bake for 10 minutes.  Remove and allow jelly to cool and set.
