Glazed Banana Pound Cake

Great thing about having bananas for breakfast in the hotel is that I get to make a lot of different types of banana bread with old bananas.  This kinda tastes like a glazed banana donut.  🙂

Glazed Banana Pound Cake

  • 3 cups Sugar
  • 1 cup Butter, softened
  • 6 eggs
  • 1 cup Bananas
  • 1 tsp. Vanilla Extract
  • 1 tsp. Banana Extract
  • 1 tsp. Almond Extract
  • 3 cups Flour
  • 1/2 tsp. Baking Soda
  • 1 cup Sour Cream

Preheat oven to 325 degrees.  Line and grease 4 loaf pans.

In a mixer, cream butter and sugar.  Add eggs individually and fold in bananas and all the extracts.  Mix flour with baking soda.  Alternate adding flour mixture and sour cream to the batter.  Fill loaf pans half full and bake 55-65 minutes.  Allow loaves to rest in pan for 10 minutes and then remove and cool on wired rack.

Glaze

  • 1 1/2 cups Powdered Sugar
  • 3 oz Banana Liquor
  • 3 oz Whole Milk

All all ingredients into a bowl and using a whisk, mix well.  Add glaze to loaves as they are resting in pan.
