Taiyaki vs. Taiyaki

Taiyaki is a street food sold in Japan and Korea.  It’s a light cake grilled  in a cast iron mold filled with sweet red bean paste.  My father and I decided to test out a couple of different recipes.  One is a Korean version that was printed on the box of the pan and the other was off the Internet.  The box recipe was more traditional crisp and the one off the Internet was more spongy and cake like.  I added Macha to the Internet recipe for fun.

Green Tea Taiyaki Batter

2/3 cup cake flour

2 teaspoon baking powder

2 1/2  tablespoon of sugar

3/4 cup milk or water (180ml)

1 egg

1 tsp baking soda

2 packets of Macha (Green tea powder)

Combine and mix all ingredients.

Traditional Taiyaki Batter

100 g Flour

70 g Water

90 g Milk

20 g Sugar

2 g Salt

2/3 Tbsp Baking Powder

Combine and mix all the ingredients

Anko Bean Paste

1 can of Anko Bean Paste

*1 Tbsp Cinnamon

*Walnuts, Chopped

* Pine Nuts, Chopped

*Optional

1. Preheat Taiyaki pan and light spray with oil.

2. Pour batter filling 2/3 of each mold.

3.  Add Anko bean paste. Try keeping it flat.

4. Add more batter to cover the paste.

5.  Close the lid and wait about 45 seconds to a minute.  Flip and carefully open to check the color of the pastry.  Continue to cook for 45 second to a minute and flip to check the color.

6. Remove onto a cooling rack.
