Chocolate Beignets

I’m headed to Nola next week so I decided to make some beignets.  I added some chocolate chips and a few with habaneros.  Yum, yum!  Testing out another recipe format.

Chocolate And Chocolate & Habanero Beignets

  • Ingredients

    • 4 c. Bread Flour, 1 c. for dusting
    • 1 1/2 c. Buttermilk
    • 3/4 c. Milk
    • 1/2 c. Chocolate Chips
    • 3 Tbsp. Sugar
    • 1/2 tsp. Baking Soda
    • 1/4 tsp. Salt
    • *1 Habanero 🙂
  • Instructions

    1. Microwave milk for about 45 seconds or warm in saucepan. It should be hot around 105-115 F. Transfer to a stand mixer and add buttermilk, sugar and yeast. Mix and allow yeast to bloom for 10 minutes.
    2. Add flour, salt and baking soda.
    3. Attach dough hook and mix on low till ingredients are fully incorporated. Increase speed to medium and mix for 5 minutes.
    4. Flour work surface and remove dough from bowl. Form a ball and roll dough out to 1/4″ thick. Allow the dough to rest for 10 minutes. Be sure to make sure that the surface has plenty of flour. Dough is very sticky.
    5. Use a knife or pizza cutter into desired size. I cut rectangles about 1 1/2″ x 2″. Place 5-10 chips at the lower end of the cut dough. Roll over so that chocolate is at the center and you have a pillow. Pinch the two open ends and set aside. Continue with remaining pieces. *I like adding slices of habanero with the chocolate for an extra kick.
    6. Heat fryer to 375F. Fry each side for about a minute each or to desired color.
    7. Dust with powdered sugar and serve.
