Crawfish Boil

For our redneck St Patty’s day, I decided to go coon ass and threw a crawfish boil.  Pretty easy way of feeding a lot of people at once with only a few pots to clean.

Cold water bath with kosher salt to purge and clean.  You want to run at least 3 baths.

Start boiling water with celery and onions.

Dried chipotle, habanero, garlic, jalapeno and Serrano.

Add chili peppers.

Add lemon, creole seasoning, chicken bouillon, and beer to stock.
Add lemon, creole seasoning, chicken bouillon, and beer to stock.  Add potatoes till full cooked and remove.  Add corn and cook about 8 minutes and remove.
Place crawfish in basket and cook with lid closed for at least 7-10 minutes depending on the size of crawfish.

Sprinkle with more creole seasoning if needed.  First couple of batches will need it.  Broth will get saltier and hotter.
